Hog casing

The world's most widely used sausage casing. Hog casings are ideal for slightly coarser sausages. They are strong and durable to work with, offering a crisp "snap" when cooked correctly. For boiled sausages in hog casings, the skin is typically peeled off before eating. Weisswurst, Bratwurst, grill sausages, Isterband, blood sausage, Salsiccia, beer sticks, and Swedish Christmas sausage (Julkorv) are just a few of the varieties traditionally stuffed in hog casings.
