Cellulose casing

Peelable casings (also known as skinless or cellulose casings) are strong, durable sausage casings produced in small calibers. The casing is made of cellulose and is used for production where straight sausages are required for frying, grilling, air-drying, and/or high-speed manufacturing. Hot dogs—so-called "skinless" sausages—are a typical product made using peelable casings. Much like fibrous casings, these are permeable to air, moisture, and smoke. They are available with various properties for different levels of peelability. The casing is either clear (undyed) or blue, and is often printed with stripes for product identification. Note: This casing should not be soaked before use. The casing is typically peeled off before packaging, which is where the name originates.
